I just LOVE Chicken Pot Pie! I don´t enjoy eating big messy Pies, so I decided to make individual ones.
This is my recipe:
1 small chicken breast (cut into small cubes)
1 small onion (chopped)
1 cup frozen veggies (pictured)
1 package instant chicken soup (pictured)
1 package turnover pastries (disco de empanadas para hornear, pictured)
2 cups of cold water (for soup)
2 tsp. oil
Salt, Pepper
Directions:
Cook chicken in a small pot with 2 tsp of oil. When it is fully cooked, add the chopped onions. Add the frozen veggies. Mix the instant soup mix into 2 cups of cold water and add to the chicken, Let it thicken.
Spray a muffin pan with non-stick oil or with butter. Tuck in the turnover pastries into the pan, spoon in the filling. Bake for about twenty minutes.
* You can also make this recipe with leftover chicken or add different vegetables such as potatoes or brocoli.
